We monitor the ripening process, determine the optimum day for harvesting and hand-pick the entire crop in 20 kg crates. This allows us to select the bunches one by one.
Once harvested, the grapes are transported quickly to the winery to avoid oxidation. When the grapes are destemmed, we go through all the boxes one by one and make a second selection.
We interpret winemaking as a personal expression. We seek to transmit the balance and strength of our grapes to our wines. We use noble materials (stainless steel, wood, clay, glass, cork) to work honestly with the Garnacha and Carignan grapes. We also use technology: inert atmosphere, temperature control of tanks, analytical laboratory.
After a respectful elaboration, with temperature controlled fermentation, long maceration and light pressing, we let the wines rest in French oak barrels, clay amphorae or stainless steel tanks, depending on the profile of each wine.
